I make this instead of apple pie as I find two-crust pies to be too fiddly to bother with. This is easier and I think it tastes better too. You can eat it hot or cold, top with ice cream or whipped cream, etc.
I tend to buy apples in bulk, and whenever they threaten to go bad, I make a batch of this. The recipe doubles easily too, just use a rectangular pan instead of the smaller square one.
Place apples in bottom of square baking pan. Sprinkle cinnamon on top.
In small bowl, mix butter, sugar and flour until it forms a crumbly mixture (streusel).
Top apples with streusel.
Bake at 350 for 40 minutes, until bubbly and lightly browned.
