This recipe makes 1 large loaf, but can easily be doubled or tripled. Extra loaves can be frozen for another time.
Sift into a medium bowl the flour, baking powder and salt.
In large bowl, mix together oil and sugar. Beat in eggs, then banana.
Add sifted ingredients about a third at a time, beating until smooth after each addition.
Mix in nuts.
TIP: The easiest way to chop nuts is to stick them in a heavy plastic bag (like a ziploc) and hammer them.
Pour batter into greased bread pan and bake at 350 degrees for an hour.
Cool completly on rack before slicing.
