I don't recall where I found this recipe originally, but it is so good, I've handed it out to nearly everyone I know!
You don't ice this cake, the butterscotch forms a pseudo-icing.
Sift flour, sugar, soda, powder, salt and cinnamon into a large bowl
Add eggs and oil and mix well.
Add zucchini and mix.
Add nuts and mix.
TIP: The easiest way to chop nuts is to stick them in a heavy plastic bag (like a ziploc) and hammer them.
Pour into a buttered rectangular cake pan.
Sprinkle butterscotch chips on top of batter.
Bake at 350 degrees for about 45 minutes, until toothpick inserted in center comes out clean.
