This recipe makes 3 large loaves. Extra loaves can be frozen for another time.
Sift into a large bowl the sugar, flour, salt, baking soda, cinnamon and nutmeg. Make a well in the middle.
Add the eggs, oil, pumpkin and water in the well. Beat well and then stir in the nuts.
TIP: The easiest way to chop nuts is to stick them in a heavy plastic bag (like a ziploc) and hammer them.
Pour the batter into 3 buttered loaf pans. Bake at 350 degrees for about an hour, or until a toothpick inserted in the center comes out clean.
Turn bread out on to rack to cool before storing.
