pumpkin pie

When I make this for Steve, I make a pumpkin custard for myself.

ingredients

• 1 3/4 cups cooked pumpkin
• 3/4 cup sugar
• 1/2 tsp lite salt
• 1 tsp cinnamon
• 1/2 tsp ginger
• 2 eggs, beaten
• 1 cup heavy cream
• 1/2 cup milk
• 1 pie crust

method

In medium bowl, stir together pumpkin, sugar, salt, cinnamon and ginger. Mix thoroughly.

Add eggs, cream and milk and mix until smooth.

Pour into pie crust and bake at 400 degrees for 25-30 minutes, until knife inserted into center comes out clean.

Cool completly before cutting.
