Italian guacamole
This is scrumptious served on a bed of green leaf lettuce, radicchio and butterhead.
ingredients
- 2 avocados, pit and peel removed and mashed
- 2 cloves garlic, pressed
- 1 TB lemon juice
- 1 small onion, diced
- 1/2 large tomato, chopped
method
Mix avocado, garlic and lemon juice until smooth. Add onion and tomato and refrigerate for at least 1 hour.
