This is not a terribly diabetic-friendly soup as beans are a bit carby, and I have never found a suitable substitute for molasses. I have about 1 cup of the beans (around 30g net carb) and fill up on salad and cole slaw.
Also, these aren't actually baked. I once tried about 10 different recipes, and this turned out our favorite even without baking.
Soak beans in water overnight.
Drain and rinse beans, put in Dutch oven covered with water by about 1 inch. Bring to boil, reduce heat and simmer about 6 hours.
Add salt, mustard, bacon, sweetener, molasses and onion and simmer an additional 2 hours.
Recipe can also be made in a large batch and canned.
