This makes a double-batch so half can be frozen for another time.
This is a mild recipe as we are wimps. If you like it hot, increase the cayenne and replace bell peppers with jalapeno or serrano peppers.
It's relatively carby due to the beans, so I only eat a cup or cup and a half and fill up on salad.
Soak beans overnight. The next day, drain and rinse and place in Dutch oven. Cover with water, bring to boil, reduce heat, cover and simmer for 3 hours, adding water if needed.
Fry hamburger, garlic, onions and peppers in skillet.
Add meat mixture, tomatoes, oregano, cumin, black pepper, paprika, cayenne and garlic powder to beans. Bring to boil, reduce heat and simmer for an hour.
Serve with shredded mild cheddar cheese, diced onions and sour cream.
Recipe can also be made in a large batch and canned.
