The potatoes aren't low-carb, of course. I eat my ham with broccoli with cheese sauce.
Cook onion in butter in cast-iron skillet over medium heat until tender. Stir in flour and mix until incorporated. Add milk all at once and stir until well mixed. Cook and stir until bubbly. Remove from heat. Stir in pepper.
In buttered casserole, layer half of the potatoes, top with half of sauce, repeat. Bake at 350 degrees for 45 minutes.
When potatoes are nearly done, fry ham slices in cast-iron skillet over medium heat until browned. Turn and brown other side.
The scalloped potato recipe doubles easily. More than that and you'd need a second skillet
