First, start heating fat for frying. I use whatever vegetable oil is on sale when I buy it. After use, I filter it back into the container it came in to reuse. it can be reused repeatedly. Heat it in a pot that you have a metal colander type thing to fit inside of.
Form hamburger into 4 large patties, top with pepper and fry in skillet over medium heat. Unless using low-fat meat, burgers need to be cooked until at least medium-well; if using low-fat meat, you can get away with medium-rare. It's best to fry them covered with a grease-catcher to avoid a mess.
Once burgers are cooking, put half the fries into the fry basket and start frying them. Time until they're done depends on their thickness. When they're ready, drop onto paper to drain and toss with salt.
Top burgers with cheese the last minute of cooking.
Serve on a bed of lettuce, tomato and onion (low-carb) or on buns with fries (high-carb).
Serve with condiments: mayo, mustard, sugar-free pickle relish.
