Preheat broiler. Beat together eggs and cream in a small bowl.

Melt bacon grease in cast-iron skillet over medium-high heat. Add ham and bell pepper and fry for a few minutes.

Add onion and fry until translucent.

Reduce heat to medium, add tomatoes and mushrooms and stir for 1 minute.

Add egg mixture, twirling pan to coat evenly. Cook for a few minutes until egg is mostly set.

Top with cheese and paprika. Place under broiler for a few minutes until top is slightly browned.
