This recipe makes a pizza on a regular pizza crust with a low-carb version on tortillas.
Proof yeast: mix sugar and water in small bowl, sprinkle yeast on top. Let sit for a few minutes to make sure the yeast is active.
In a large bowl, combine flour, salt, olive oil and yeast mixture.
Place dough on lightly-floured cutting board and knead for 5-10 minutes, until gluten develops and dough ball is smooth and resilient. Cover dough with towel and let rest for 20 minutes.
Roll dough out into circle on pizza pan. Bake at 425 degrees for about 8 minutes to pre-bake the crust.
Meanwhile, place tortillas in two cast-iron skillets. Top each with 1/4 of the sauce. garlic powder, mozzarella, bell pepper, onion, mushroom, pepperoni and parmesan. after removing the pizza crust from oven, place low-carb pizzas in oven and bake until cheese is hot and bubbly, about 8 minutes.
Top regular pizza crust with other half of ingredients. Place in oven and bake until cheese is hot and bubbly, about 10 minutes.
